Dutch Baby

**word of warning: If you are diabetic, concerned with cholesterol, or are just a health nut in general, you may not want to read any further**

  • 2 tablespoons butter
  • 3 medium apples
  • 4 tablespoons brown sugar
  • 1 tablespoon cinnamon
  • 1/2 cup of pecans
  • 5 WHOLE eggs
  • 1 cup of flour
  • 1 cup of milk
  • 1/2 cup powdered sugar
  • 2-3 teaspoons of milk

Peel and chop apples. Melt butter in big cast iron skillet on top of stove. Saute apples, sugar cinnamon, and pecans in the butter until the apples are soft and brown and the sugar has melted all gooey and delicious. Slightly bet the eggs together in a bowl. Add the milk and flour. Pour ion skillet on top of apples et al. Bake at 400 * for 15-20 minutes or pancakey mixture is golden and fluffy.Mix together powdered sugar and milk. Pour over baby after it comes out of the oven. MMMMMmmmmmm.

The verdict: I love this. Nathaniel likes it. Samuel and Benjamin won’t eat it. (I think it has more to do with the name than anything. They don’t want to eat a baby. Nathaniel  wouldn’t eat Cornish hens for a while because he thought it was a baby chicken” Guess who didn’t want to tell him what eggs are) Mark has not tried it. Oh, well, it is probably not very good for us, so I guess it is a good thing that it is not at the top of my family’s list of favorite things.
